We have several go-to salad combos that are very easy, provided you remember what they are, and have the ingredients. Hence the “Ireland” salad – green, white and orange, like the flag of Ireland, and of course it’s low-FODMAP too.
Ever since our low-FODMAP journey began, there hasn't been a day that we didn't have at least one carrot in the fridge - they're just so versatile and tasty! This salad takes advantage of the versatile carrot, and many other basics you're likely to have floating around.

Ingredients
- 1/2 bag salad greens or any form of lettuce you have handy
- 1 medium carrot
- 1 small cucumber
- 1 handful Parmesan cheese

Instructions
- Grate the carrot, and chop the cucumber into cubes. Pop into a small bowl with about a teaspoon of vinegar, and mix around.
- Place your salad greens into a bowl, then dump the carrot and cucumber on top. Sprinkle over the parmesan, and mix it all together.
- All done! Was that easy, or what?
