This is a throw-it-together take on your classic tomato pasta dish. Feel free to change up the ingredients with other low-FODMAP items you have available – courgette and carrot make great additions.
Put a pot of water on to boil, then add the pasta once boiling. Set a timer for 7 minutes. Once cooked (it should be slightly beyond al dente), remove from the heat, drain and set aside.
Heat some oil in a medium pan at medium heat, dice the chicken, then add to the pan. Stir occasionally for 5 minutes or so, until cooked.
Once the chicken is cooked, add the tomato and sugar. Roughly chop the ham then add it to the pan.
After about 5 minutes, the tomato sauce should have thickened. Tip it into the pot with the pasta, and mix through.
Distribute the pasta between two bowls, and top with parmesan cheese to serve.
