Spiral pasta :: Living FODMAP

This simple dish tastes good and is pretty straight-forward to make. If you’re on a low-FODMAP diet and you’ve been missing pasta, this will satisfy your craving without putting your diet off track.

Rowan's spiral pasta
This is a throw-it-together take on your classic tomato pasta dish. Feel free to change up the ingredients with other low-FODMAP items you have available - courgette and carrot make great additions.

Instructions
  1. Put a pot of water on to boil, then add the pasta once boiling. Set a timer for 7 minutes. Once cooked (it should be slightly beyond al dente), remove from the heat, drain and set aside.
  2. Heat some oil in a medium pan at medium heat, dice the chicken, then add to the pan. Stir occasionally for 5 minutes or so, until cooked.
  3. Once the chicken is cooked, add the tomato and sugar. Roughly chop the ham then add it to the pan.
  4. After about 5 minutes, the tomato sauce should have thickened. Tip it into the pot with the pasta, and mix through.
  5. Distribute the pasta between two bowls, and top with parmesan cheese to serve.
