Edamame soba salad :: LivingFODMAP
Instructions
  1. Bring a pot of water to the boil, and add the soba noodles. They should take 4-5 minutes to cook. Once cooked, drain them, run under cold water, drain again, then mix with sesame oil.
  2. Put edamame beans and a pinch of salt into a bowl, add boiling water, then cover and leave to cook for 5 minutes. Once the beans are cooked they'll be bright green. Drain the water, rinse with cold water, drain again, then mix in the mayonnaise.
  3. Finely slice the capsicum, and peel and grate the carrot.
  4. Serve the noodles out into bowls, spoon the beans on top, then sprinkle over the capsicum and carrot. Bon apetit!
