Ingredients
250
grams
oat flour
or any FODMAP friendly flour you like

tbsp
brown sugar
2
tsp
baking powder
1
tsp
baking soda
if there’s any measurement you’re going to be pedantic with, make it this one!

tbsp
mixed spice
provided it has ginger, cinnamon, and nutmeg, you should be fine

tbsp
maple syrup
get the real stuff, if you can

coconut oil
melt it

tbsp
almond milk
or other FODMAP friendly milk

vanilla extract
check the label for unwanted preservatives etc
Instructions
Preheat your oven to 180C
Combine oat flour, brown sugar, baking powder, baking soda, salt and spices in a bowl using a wooden spoon.
Use an electric whisk and add in melted coconut oil, milk, vanilla extract and maple syrup, mixing as you go.
Roll dough into 16 cookie balls and place on a greased baking sheet.
Bake for 8 minutes.
Allow cookies to cool on a cool and keep in an airtight container… though you might want to eat a couple while they’re warm!
