After a good, hard week of strictly monitoring your diet, it’s really nice to have a bit of a treat. These cookies may be FODMAP friendly, but they taste so good that you’ll feel guilty anyway! Combine great taste with a really quick turnaround and not many dishes, and you really can’t go wrong.

Ingredients
- 250 grams oat flour or any FODMAP friendly flour you like
- 5 tbsp brown sugar
- 2 tsp baking powder
- 1 tsp baking soda if there's any measurement you're going to be pedantic with, make it this one!
- 3 tbsp mixed spice provided it has ginger, cinnamon, and nutmeg, you should be fine
- 4 tbsp maple syrup get the real stuff, if you can
- 5 tbsp coconut oil melt it
- 2 tbsp almond milk or other FODMAP friendly milk
- 1 tsp vanilla extract check the label for unwanted preservatives etc

Instructions
- Preheat your oven to 180C
- Combine oat flour, brown sugar, baking powder, baking soda, salt and spices in a bowl using a wooden spoon.
- Use an electric whisk and add in melted coconut oil, milk, vanilla extract and maple syrup, mixing as you go.
- Roll dough into 16 cookie balls and place on a greased baking sheet.
- Bake for 8 minutes.
- Allow cookies to cool on a cool and keep in an airtight container... though you might want to eat a couple while they're warm!
