After much consternation and worrying, we bit the bullet and went camping. This was our first foray away from the known security of having IBS at home, and quite a scary step. Would there be toilets? Ice for our chilly bin? Supermarkets?
We did it, we survived, and now we have a nice list of “camping food” (which we’re now continuing to eat at home) that we know is safe, easy, and delicious. Here it is – after some thought, we realised there was no point listing by meal, as most can be enjoyed at any time:
- Soaked oats
- Omelette (tomato + ham)
- Bacon & eggs + hash browns
- “Nachos” – mince + crushed tomatoes served with corn chips
- Steak + salad – usually our salads contained lettuce, tomato, cucumber and were seasoned with salt, pepper, and a squeeze of lemon juice
- Spaghetti bolognese (with gluten free spaghetti)
- Ham sandwiches (with gluten free bread)
We got by quite happily on this diet for about a week, and loved it! Camping is now on the “would do again” list – yippee!
