Because you know what? Coleslaw works just fine without cabbage! We’ve also excluded onion, because it tends to irritate your bowels AND it gives you stinky breath… why bother?
Add a side of steak, or teriyaki chicken + rice and you’ve got yourself dinner.
Instructions
- Slice the lettuce up into coleslaw-esque strips, chuck into a bowl, and add grate carrot and chopped cucumber. Chuck in the lemon juice, olive oil, vinegar, and salt and pepper to taste. Then you're done! Serve it up and enjoy.
